A story of sustainability, flavor and connection from the slopes of Cerro Verde.
Just two kilometers from Hotel Equinoccio, on the fertile lands of Cerro Verde, a project that represents our essence flourishes: an organic farm lovingly tended by our team. This space not only supplies our hotel with fresh ingredients, but also strengthens our vision of a more conscious tourism, connected to the land and to our community.
From the very beginning, we understood that offering an authentic experience was not just a matter of landscape or design. It also had to come from what we put on the plate. That is why every lemon, every coffee bean, every squash or ear of corn that reaches your table comes from living soil, tended with care, and grown without agrochemicals.
Conscious Agriculture, Real Flavor
Thanks to the temperate climate and volcanic soil, we cultivate a variety of fruits, vegetables and legumes that we transform into fresh, nutritious dishes. Among them: lemons, avocados, squash, beans, corn, and a high-altitude coffee that we dry and grind by hand for consumption at the hotel — and for those who wish to take a piece of Equinoccio home.
Every step of the process — from sowing to harvest — is carried out by our own team. Local people who, more than producing food, care for an ecosystem with traditional techniques and a genuine commitment to sustainability.
From the Field to the Heart of the Experience
Our farm does not only supply our kitchen. It also generates dignified employment, strengthens the local economy and reduces our environmental footprint. But above all, it allows us to offer you a meaningful experience: every dish you enjoy at Equinoccio is filled with history, care and connection.
When you visit the hotel, you are not only contemplating the beauty of the lake. You also become part of a life cycle that begins in the earth, passes through our hands, and arrives at your table as an invitation to reconnect with what is essential.
